Pauline Molyneau

Caribbean Cooking Educator | Community Workshop Leader
I was born in Jamaica and raised around authentic Caribbean home cooking, where seasoning, timing and technique were taken seriously. Food was never rushed. It was respected.
Over the past 35 years, I have worked as a professional chef, built my catering business, and founded Essence of the Caribbean Cuisine. I have cooked for private clients, led hands-on training sessions, delivered chef refresh programmes, and supported community and charity workshops where food brings people together.
Cooking has always been part of my life. But teaching is where I found my purpose.
Through years in kitchens and classrooms, I noticed something consistent. Most adults are not struggling because they cannot cook. They are struggling because no one has shown them the structure properly. The same applies to chefs and restaurants wanting to introduce Caribbean dishes but lacking authentic guidance.
I understand what it feels like to doubt yourself. I am dyslexic. For years I overthought things and relied too much on others instead of trusting my experience. That shaped the way I teach today.
My sessions are calm, structured and practical. I break things down clearly. You ask questions freely. You repeat dishes if needed. You move forward only when you feel ready.
I do this because I believe cooking is a life skill, not a talent. And Caribbean food deserves to be taught properly with authenticity, respect and real technique.
